WHere is a home-style take on a cocktail featured on a new drinks list. Designed as a large-volume pre-mixed which is bursting with the flavours of a festive period, which makes it ideal for your holiday party. Save the extra citrus syrup you can use for brunch beverages, desserts, or to mix additional servings of this cocktail.

Makes enough for 10 guests
To make the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Place all the items inside a pot, bring to a gentle boil, mixing to dissolve. Next, remove from the burner and let it to cool entirely. Decant to a clean bottle, cap it keeping it in the refrigerator, where it will keep for around a month.
For the Cocktail Base: Combine the specified liquids into a large bottle, let it rest for an hour, then strain , ideally through a fine cloth, to ensure it's perfectly clear.
For serving: Measure 85ml of the premix into a cocktail shaker filled with ice, and stir carefully for about 60 seconds to cool it down. Filter into an chilled martini glass or a similar vessel, top with some cranberries and complete it with a brief mist of mandarin oil over the drink.
